Now that we can have some company over we’re all entertaining! And I think brunch is a great way to open up our homes, don't you?
I'm always looking for recipes that I can feed a group with and that come together quickly and easily. I found this one from "Just a Taste" (www.justataste.com). It's so simple and easy to make, and it has a perfect combination of potato, cheese, bacon, and eggs. I like it because it is a pretty basic one, which is good - especially for the host! You can be as creative with it as you like. In this video, I added bacon. And since I also like my potatoes VERY crispy, I added an extra five minutes of cook time after pushing the potatoes back into the cups after the first bake. You can add scallions, or use different cheeses, add your favorite herbs and ingredients or bacon like I did. Happy brunching!
