The right pasta for the right sauces. | Fran Berger

Who doesn't love a plate of pasta? The challenge can be learning what kind of pasta is BEST with the sauces we want to prepare and enjoy. 

 

The strand and ribbon pasta (examples: Spaghetti, Bucatini, Linguini, Pappardelle, Fettuccine) are good with sauces that coat each strand evenly. Aglio e Olio (Italian: "olive oil and garlic") is a straightforward option and tastes excellent. But you can't go wrong with a simple tomato, pesto, seafood, or meat sauce either. 

 

Tube pastas (Penne, Ziti, Rigatoni) trap sauces (YUM!) and flavor in their ridges and holes. Anything they come into contact with becomes part of its flavor. Think hearty meat, cheese, or cream sauces.

 

Shaped pasta (Fusilli, Cavatappi, Orecchiette) is great with chunky veggies and cheese and butter sauces.

 

And, it all depends on what you want to do with filled or baked pasta (Lasagna, Ravioli, Tortellini). Filled pasta is better with lighter sauces, and baked pasta works best with heartier sauces.
